I have been making this dinner for YEARS! The best part is that you can mix up whatever veggies and flavors you make with it, so it never gets boring. It also makes a good amount so you know you'll have leftovers. I'll share our favorite way to enjoy this, but feel free to modify the veggies and flavorings for how you like it.

Process

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. In a small pot, add the jasmine rice with the bone broth. Turn on high and bring to a boil. Once rice is boiling, lower heat to low and cover. Once all liquid is absorbed, turn off and remove from hot burner. Fluff with a fork.
  2. While you're waiting for the rice to boil, add olive oil to a large pan. Add in the minced garlic and minced ginger and let simmer.
  3. Add in ground chicken or turkey and cook until no longer pink. Add in frozen spinach and corn and mix until well combined.
  4. When served, top with sriracha or hot sauce. Enjoy!
