Healthy Banana Pudding Parfaits
These dairy free, gluten free, and refined sugar free pudding parfaits are a delicious throwback! Pair with your homemade Nilla wafers (recipe on my page!) and you've got a guilt free, preservative free treat!
Ingredients
- 2 cups2 cups2 cups Coconut Milk, Roughly 1 can
- 2 whole2 whole2 whole Egg Yolk
- 3 Tbsp3 Tbsp3 Tbsp Arrowroot Flour
- 1 tsp1 tsp1 tsp Pure Vanilla Extract

- 3 Tbsp3 Tbsp3 Tbsp Pure Maple Syrup
- 0.25 tsp0.25 tsp0.25 tsp Sea Salt

- 1 whole1 whole1 whole Banana
- 1 whole1 whole1 whole Coconut Cream, 1 can

- .25 cup.25 cup.25 cup Confectioners Sugar, Powdered - Swerve, Or organic powdered sugar

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Whisk all ingredients, minus banana and whipped topping, together on stove top
- Cook over medium heat for 6-8 minutes until thickened
- Pour into individual cups or one glass bowl, cover and refrigerate until cool (2-4 hours)
- To make parfaits layer with crushed nilla wafers, homemade cool whip, and banana coins
- For cool whip place ingredients in a chilled mixing bowl and mix with a hand mixer until fluffy. Place in fridge to thicken up then ready for use!
