Healthy Blueberry Banana Bread
One day I randomly got a craving for blueberry banana bread, and I haven't been able to move on since. Why? I'm not sure, but I have to say I'm proud of the execution! Bake this easy, nutritious bread up until the top is golden brown, and allow to cool completely before slicing. I love this served as is, with a little butter, nut butter, you name it. Pair with a cup of coffee, and you'll thank me😘.
Ingredients
- 3 whole3 whole3 whole Banana, ripe
- 333 Eggs
- 3 Tbsp3 Tbsp3 Tbsp Pure Maple Syrup
- 1 tsp1 tsp1 tsp Pure Vanilla Extract
- 2 cups2 cups2 cups Almond Flour
- 1 tsp1 tsp1 tsp Ground Cinnamon
- 1 tsp1 tsp1 tsp Baking Powder
- 0.25 tsp0.25 tsp0.25 tsp Salt
- 0.75 cup0.75 cup0.75 cup Blueberries, plus more for topping

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Preheat oven to 350 degrees. Line a baking tin with parchment paper and lightly grease. Set aside.
- To a large mixing bowl, add bananas, using two forks to mash completely. Add eggs, maple syrup, and vanilla. Whisk to incorporate.
- Add almond flour, cinnamon, baking powder, and salt. Mix to create a well-combined batter.
- Add in blueberries, and mix to incorporate.
- Pour into prepared pan, smoothing into an even layer. Top with additional blueberries.
- Bake for ~60 minutes. Option to cover with foil for the last 20-30 minutes if the top is browning too quickly.
- Allow to cool completely before slicing. Enjoy!
