Healthy Italian Minestrone Soup
This warm Minestrone Soup is perfect for cold weather nights. It is a veggie packed Italian Minestrone. I simplify this recipe by using canned fire roasted tomatoes and great northern white beans. the whole family will love this amazing soup packed with veggies filled with a powerhouse of nutrients! Serve with a piece of homemade garlic bread giving you all the feels sitting down to a warm bowl after a busy weekday.
Ingredients
- 2 Tbsp2 Tbsp2 Tbsp Extra Virgin Olive Oil
- 1 whole1 whole1 whole Yellow Onion, diced
- 2 whole2 whole2 whole Celery, chopped
- 2 whole2 whole2 whole Carrots, peeled, sliced
- 5 cloves5 cloves5 cloves Garlic, crushed and diced
- 2 Tbsp2 Tbsp2 Tbsp Tomato Paste, organic
- 28 oz28 oz28 oz Fire Roasted Tomato
- 15.5 oz15.5 oz15.5 oz Canned Great Northern Beans, Washed, drained
- 6 cups6 cups6 cups Vegetable Broth, organic
- 2 cups2 cups2 cups Spinach, organic, washed
- 1 whole1 whole1 whole Zucchini, quartered
- 1 tsp1 tsp1 tsp dried Thyme
- 1 tsp1 tsp1 tsp dried Oregano
- .75 cup.75 cup.75 cup Pasta, choice
- 111 Salt and Pepper, to taste

- Heat large pot with olive oil on medium heat. Peel Carrots. Dice celery, onion and carrots. Quarter zucchini into equal sizes. Crush and dice garlic. Add celery, onion and carrots. Cook 8-10 minutes till tender. Add garlic and tomato paste stirring continuously for 3 minutes till smell aroma of garlic. Drain beans. Add beans, zucchini, tomatoes, vegetable broth, spices and cover and simmer for 20 minutes. Add your choice of pasta and cook 10 minutes uncovered till tender. Lastly add spinach and simmer till wilted. Pour carefully with ladle into favorite soup bowl. Add shaved parmesan cheese and serve with a piece of homemade garlic bread! Yum!
