Healthy Italian Minestrone Soup (Edit recipe)

This warm Minestrone Soup is perfect for cold weather nights.  It is a veggie packed Italian Minestrone.  I simplify this recipe by using canned fire roasted tomatoes and great northern white beans.  the whole family will love this amazing soup packed with veggies filled with a powerhouse of nutrients!  Serve with a piece of homemade garlic bread giving you all the feels sitting down to  a warm bowl after a busy weekday.

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Heat large pot with olive oil on medium heat. Peel Carrots. Dice celery, onion and carrots. Quarter zucchini into equal sizes. Crush and dice garlic. Add celery, onion and carrots. Cook 8-10 minutes till tender. Add garlic and tomato paste stirring continuously for 3 minutes till smell aroma of garlic. Drain beans. Add beans, zucchini, tomatoes, vegetable broth, spices and cover and simmer for 20 minutes. Add your choice of pasta and cook 10 minutes uncovered till tender. Lastly add spinach and simmer till wilted. Pour carefully with ladle into favorite soup bowl. Add shaved parmesan cheese and serve with a piece of homemade garlic bread! Yum!
