- 1.5 cup1.5 cup1.5 cup Oat Flour
- .25 cup.25 cup.25 cup Coconut Sugar
- .25 cup.25 cup.25 cup Vanilla Protein Powder (Nuzest)
- 2 tsp2 tsp2 tsp Baking Powder
- .5 tsp.5 tsp.5 tsp Baking Soda
- 1 cup1 cup1 cup Blueberries

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Preheat your oven to 350 F
- In a large mixing bowl add the almond milk, egg, Greek yogurt, lemon juice, vanilla extract and whisk until combined.
- Add in the sugar, oats, oat flour, protein powder, baking soda, baking powder and mix well.
- Lastly gently fold in the blueberries and transfer the batter to a lightly greased muffin pan. It makes about 8 muffins.
- Bake in the oven for 30-35 minutes or until a toothpick comes out clean.
- Let them cool for 20 minutes and enjoy!
