  1. Preheat your oven to 350 F
  2. In a large mixing bowl add the almond milk, egg, Greek yogurt, lemon juice, vanilla extract and whisk until combined.
  3. Add in the sugar, oats, oat flour, protein powder, baking soda, baking powder and mix well.
  4. Lastly gently fold in the blueberries and transfer the batter to a lightly greased muffin pan. It makes about 8 muffins.
  5. Bake in the oven for 30-35 minutes or until a toothpick comes out clean.
  6. Let them cool for 20 minutes and enjoy!
