  1. In a medium bowl, mix peanut butter, honey or maple syrup, protein powder, coconut flour, and sea salt until a thick dough forms. Adjust with a little extra flour if the mixture is too sticky.
  2. Scoop about 1 tablespoon of the dough and roll into balls. Place on a parchment-lined tray and freeze for 20-30 minutes until firm.
  3. Melt dark chocolate chips and coconut oil in the microwave in 20-second increments, stirring until smooth.
  4. Remove the balls from the freezer. Use a toothpick or fork to dip each ball into the melted chocolate, leaving a small portion of the peanut butter exposed on top for the classic "buckeye" look.
  5. Return the chocolate-dipped buckeyes to the parchment-lined tray. Refrigerate or freeze until the chocolate is fully set.
  6. Enjoy chilled for the best texture. Store leftovers in an airtight container in the fridge or freezer.
