High Protein Chocolate Mousse Cups
This velvety smooth chocolate mousse is packed with protein, it's gluten free, refined sugar free, and it makes you MMM with each bite! Topped with some chocolate cookie crumbles and white chocolate covered strawberries for festive "carrot patch dirt cup vibes 🐣🥕
Ingredients
- 16 oz16 oz16 oz Cottage Cheese
- 1 Tbsp1 Tbsp1 Tbsp Cocoa Powder
- 0.33 cup0.33 cup0.33 cup Chocolate Protein Powder
- .25 cup.25 cup.25 cup Creamy Peanut Butter, Or almond butter or a hazelnut butter for pure chocolate flavor
- 3 - 4 Tbsp3 - 4 Tbsp3 - 4 Tbsp Medjool Date Syrup, Or maple
- 3 Tbsp3 Tbsp3 Tbsp Double Chocolate Crunchy Cookies - Simple Mills
- 4 whole4 whole4 whole Strawberries
Process
Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Blend mousse ingredients together until smooth, scraping the sides as needed
- Pour into 4 individual cups / jars and refrigerate 1hr + for optimal taste & texture
- For Easter topping: Crush some chocolate cookies of choice
- Melt white chocolate, add natural orange colorant like Color Kitchen Foods brand, dip strawberries and set on parchment paper to harden
- Assemble mousse cups by topping with cookie crumbles as the "diet" and orange strawberries as the "carrot"
- Enjoy!
- Keep stored in the fridge, covered, for up to 4-5 days without toppings
