High Protein Patriotic Ice Cream Sandwiches (Edit recipe)

I used my incredibly soft and chewy protein cookies, and sandwiched them between a simple creamy protein ice cream!

Process

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. * Preheat oven to 350°F.

  2. * Whisk together oat flour, pea protein, arrowroot, baking powder, and salt.
  3. * Add coconut oil, maple syrup, applesauce, and vanilla.
  4. * Chill 10–15 minutes — pea protein thickens slightly as it absorbs liquid
  5. * Fold in chocolate chips
  6. * Scoop 2 tbsp dough balls, flatten slightly.
  7. * Press chocolate gems on top of the cookies so they're vibrant and visual
  8. * Cook for 8-10 minutes
  9. * Cool 10 minutes and move to a cooling rack
  10. Blend ice cream ingredients together for 10-15 seconds (don't over blend or you can cause the fat to separate and curdle)
  11. Pour into a small dish
  12. Freeze for 3 hours, and if able, stir at the 45 minute mark x2 to keep it extra creamy
  13. Scoop onto your cookies, dip in crushed chocolate gems, and enjoy!
