Homemade Breakfast Sausage Recipe (Gluten Free)
Breakfast sausages are a staple in our morning routine, so it was exciting to make some from scratch! I’ve wrapped each one individually in parchment paper and stored them in my favorite freezer bags, making it easy to grab a high-protein addition for my breakfasts throughout the week. Whether I enjoy them on their own or pair them with eggs, they’re a delicious and convenient option to meal prep!
Ingredients
- 1 lb1 lb1 lb Ground Pork, can sub ground chicken
- 1 tsp1 tsp1 tsp Sage, dried
- 1/2 tsp1/2 tsp1/2 tsp Thyme, Dried
- 1/2 tsp1/2 tsp1/2 tsp Garlic Powder
- 1/2 tsp1/2 tsp1/2 tsp Onion Powder
- 1/2 tsp1/2 tsp1/2 tsp Salt
- 1/4 tsp1/4 tsp1/4 tsp Black Pepper
- 2 Tbsp2 Tbsp2 Tbsp Olive Oil
- 1 pinch1 pinch1 pinch Microgreens, optional, for garnish

- In a large mixing bowl, combine the ground pork and seasonings, mixing until fully incorporated.
- Divide the mixture into 8 to 10 equal balls and flatten each to about 1/2 inch thick (or a little thinner), adding a slight dimple in the center to help with even cooking.
- Heat olive oil in a large pan over medium-high heat. Add the patties in a single layer, cooking in batches if necessary to avoid crowding the pan and ensure even cooking.
- Place the patties in the pan and cook for about 2 minutes per side, flipping halfway through, until browned and cooked through, ensuring the internal temperature reaches 160°F.
- Serve warm and enjoy!
