while this technically isn’t authentic chorizo, this homemade version is bold, smoky, & wildly flavorful — and hands-down my favorite protein to throw into burrito bowls, taco salads, breakfast tacos, or any mexican-inspired situation 🌮🔥
to me, it’s like taco meat’s smokier, spicier (dare i say… tastier 😉) older cousin. same cantina vibes, just leveled up! make it with ground pork, beef, chicken, turkey — or mix & match. super versatile, meal-prep friendly, & guaranteed to make your kitchen smell incredible.
Ingredients
- 20 oz20 oz20 oz Bell Pepper and Onion Blend, Frozen
- 2 lb2 lb2 lb Ground Beef, or ground meat of choice

- 10 oz10 oz10 oz Diced Tomatoes & Green Chilies - Rotel

- 5 oz5 oz5 oz Green Chilies
- 1 Tbsp1 Tbsp1 Tbsp Apple Cider Vinegar
- 1 Tbsp1 Tbsp1 Tbsp Smoked Paprika
- 1 Tbsp1 Tbsp1 Tbsp Chili Powder
- 1 tsp1 tsp1 tsp Cumin, Ground

- 1 tsp1 tsp1 tsp Oregano, Dried

- 1 tsp1 tsp1 tsp Coriander, Ground
- 1 tsp1 tsp1 tsp Garlic Powder

- 1 tsp1 tsp1 tsp Onion Powder

- 1/4 tsp1/4 tsp1/4 tsp Cinnamon, Ground

- 1/2 Tbsp1/2 Tbsp1/2 Tbsp Salt and Pepper, to taste
- 1-2 Tbsp1-2 Tbsp1-2 Tbsp Classic Monkfruit Sweetener (with Allulose) - Lakanto, optional

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- in a large skillet, saute peppers & onions for 6-8 minutes.
- add ground meat of choice to the skillet & brown.
- once meat is cooked, add diced tomatoes/green chiles, vinegar & seasonings to make “chorizo” meat; simmer for 10-15 minutes.
