- 2 Tbsp2 Tbsp2 Tbsp João's Arbosana Extra Virgin Olive Oil - Wildly Virgin
- 1 Tbsp1 Tbsp1 Tbsp Soffritto Italian Seasoning Blend - Trader Joe's
- 1 tsp1 tsp1 tsp Oregano, Dried
- 1 tsp1 tsp1 tsp Garlic Powder
- 1 pinch1 pinch1 pinch Salt and Pepper
Process

- Preheat oven to 400°F (200°C) and line a sheet pan with parchment paper.
- In a large bowl, toss fennel, radishes, carrots with olive oil, oregano, garlic powder, salt, and pepper.

- Roast for 25–30 minutes, flipping halfway, until veggies are tender and sausages are browned
