Lava Cake Baked Oats
These lava cake baked oats are the ultimate dessert for breakfast or healthier dessert! Probably the most chocolatey and decadent oats you will ever eat.
These baked oats taste like chocolate cake, with a molten chocolate center and finished with a dusting of powdered sugar and strawberries for a real treat. BUT it’s made healthier with ingredients like oat flour, protein powder, and naturally sweetened with maple syrup, making it a great decadent breakfast or healthier dessert! I love making this and hope you will try it too!
Ingredients
- 0.333 cup0.333 cup0.333 cup Oat Flour, or blend 1/2 cup rolled oats into a flour
- 2 Tbsp2 Tbsp2 Tbsp Chocolate Protein Powder, optional-- if using, then add an extra 1-2 tbsp milk
- 1 Tbsp1 Tbsp1 Tbsp Cocoa Powder
- 0.5 tsp0.5 tsp0.5 tsp Baking Powder
- 1 pinch1 pinch1 pinch Salt
- 0.25 cup0.25 cup0.25 cup Almond Milk, or milk of choice, plus more as needed
- 2 Tbsp2 Tbsp2 Tbsp unsweetened Applesauce, or yogurt of choice
- 2 tsp2 tsp2 tsp Pure Maple Syrup, or sweetener of choice (I also like monkfruit sweetner), add more to taste
- 0.5 tsp0.5 tsp0.5 tsp Vanilla Extract
- 111 Dark Chocolate, truffle (a square of chocolate or chocolate pudding will work as well)

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Preheat oven to 350F. Grease a small baking dish with cooking spray.
- In a mixing bowl, combine oat flour, protein powder, cocoa powder, baking powder. and salt. Stir until combined.
- Add in almond milk, applesauce, maple syrup, and vanilla extract and stir until combined and smooth. Taste and add more sweetener if desired. Add more milk if needed, 1 tablespoon at a time, until it reaches a smooth cake batter-like consistency.
- Pour about three-quarters of the batter into the prepared baking dish. Add the piece of chocolate to the center. Cover with the remaining batter and smooth out the top.
- Bake for about 20 minutes for a cake-like texture. If you like the texture of the oats to be more molten and gooey, then bake for 15 minutes. Let cool slightly. Serve in the baking dish or flip onto a plate. Dust with powdered sugar and strawberries and dig in!
