Limber de Coco Popsicles
Limber de coco is creamy, coconut ice typically made in plastic cups. In my version, I am making the traditional limber de coco recipe but using a popsicle tray to make coconut popsicles, also known as paletas de coco.
Ingredients
- 2 cups2 cups2 cups Coconut Milk
- 2 cups2 cups2 cups Evaporated Milk
- 1 cup1 cup1 cup Cream of Coconut, Sweetened
- 0.25 cup0.25 cup0.25 cup Coconut Water
- 0.5 cup0.5 cup0.5 cup Coconut Flakes, Unsweetened
- 1 tsp1 tsp1 tsp Pure Vanilla Extract

- 2 whole2 whole2 whole Cinnamon Stick, Whole

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Add all ingredients to a large bowl. Stir until well combined.
- Pour mixture into popsicle tray.
- Freeze for at least 6-8 hours or overnight.

I like this popsicle tray: https://amzn.to/438Fr7X If using cinnamon sticks, warm the mixture over low heat for 5 minutes to infuse with cinnamon flavor. Alternatively, you could add 1/2 tsp of cinnamon powder and no need to warm the mixture.
