Chocolate Pudding (Vegan)
This rich, creamy, indulgent chocolate pudding is the perfect quick and easy after dinner treat. It is made with a handful of pantry friendly ingredients and only takes 15 minutes to prepare. Delicious on its own, it is also the perfect addition to layered desserts, parfaits, cakes and pies.
Ingredients
- 2 cups2 cups2 cups Oat Milk, Organic, (or other plant-based milk)

- 4 Tbsp4 Tbsp4 Tbsp Cocoa Powder, (or cacao powder)

- 3 Tbsp3 Tbsp3 Tbsp Cornstarch
- .66 cup.66 cup.66 cup Cane Sugar
- 1.33 Tbsp1.33 Tbsp1.33 Tbsp Vanilla Extract, (1 tbsp + 1 tsp)

- 4 Tbsp4 Tbsp4 Tbsp Plant-Based Butter, -room temperature

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- In a medium pot add the sugar, cornstarch and cocoa powder; whisk to fully combine. Add the milk and whisk to fully incorporate.
- Place the pot over medium heat and stir until the sugar is dissolved.
- Bring the mixture to a simmer, stirring regularly as the mixture thickens.
- Once the desired thickness is reached (took about 12 minutes), remove the pot from the heat and add the vanilla extract and butter. Stir the pudding until the butter is melted and fully incorporated.
- Pour the pudding into a heat safe container and allow it to cool down.
- The pudding will keep well in the refrigerator for 5 to 7 days.
