loaded green chili “cornbread” waffles + cowboy chili (Edit recipe)

giddy up cowboy, this recipe is sure to knock off your boots! usually chili is a strict winter only meal for me, but this fun recipe can even be enjoyed during the summer months. while the waffles are delicious, you could also serve the cowboy chili over roasted veggies, potatoes, or even with a good ole tortilla chip.

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. green chili “cornbread” waffles:
  2. microwave cauliflower rice for 4-5 minutes.
  3. allow cauliflower rice to cool, then place in a cheese cloth & drain as much water as you can from the cauliflower rice.
  4. to a bowl mix dry ingredients together by adding nut crumbs, nutritional yeast, psyllium husk, coconut flour, lakanto, baking powder, & sea salt.
  5. to a separate bowl mix wet ingredients together by whisking together eggs, greek yogurt, green chiles, & water.
  6. add cauliflower rice & liquid ingredients to dry ingredients.
  7. fold in cheese.
  8. allow batter to sit for 5-10 minutes to thicken - if too thick, add a couple more tablespoons of water.
  9. heat a waffle iron & grease with a little butter or oil.
  10. add ~½ cup batter into waffle-iron.
  11. cook until waffles are crisp, ~3-4 minutes.
  12. cowboy chili:
  13. in a large pot, saute onion & peppers.
  14. transfer veggies to a plate, then add meat to pan & brown.
  15. once meat is fully cooked, add veggies, bacon, & beans to meat.
  16. in a small bowl, whisk together ketchup, mustard, sugar, ACV, & seasonings.
  17. add sauce mixture & water to meat mixture.
  18. bring to a boil, then reduce to a simmer for 10-15 minutes.
  19. to serve, first add a waffle to a plate, then load on cowboy chili & sprinkle cheese, greek yogurt, or any other toppings on top.
