Mango Lassi Popsicles (Edit recipe)

Mango lassi is a much loved delicious Indian drink so why not make the popsicle version that is a yummy summer treat under 100 calories! This popsicle combines tropical sweetness of luscious ripe mangoes with the creamy tanginess of greek yogurt and a hint of fragrant cardamom. It's a perfect healthy summer treat without any artificial ingredients or excess sugar. And if you are a fan of mangoes, its a must try for you!

Ingredients

  • 2 cups Mango, Use fresh and ripe mango chunks
  • 1 cup Plain Greek Yogurt, Use whole greek yogurt, not non fat
  • 2 Tbsp Honey, can substitute with maple syrup
  • 2 whole Cardamom Pods (whole pods), Can substitute with cardamom seeds or powder

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Add the ripe mango chunks to a blender
  2. Add Greek yogurt and cardamom to the blender
  3. Blend well and pour into popsicle molds ( I use medium sized molds and got 6 popsicles from the measured ingredients)
  4. Freeze over night and remove from molds
  5. Before eating, leave the popsicle out at room temperature for 5 minutes

Notes

The mangoes you use for this need to be ripe. If your mangoes are not ripe yet, wrap them in a newspaper or put them in a paper bag at room temperature for a few days Greek yogurt can be substituted with nut yogurt to make this dairy free
