Meal Prep Lamb Bolognese (Edit recipe)

When you get 3lb of organic ground lamb from Costco, you use it in delicious ways! I have never made bolognese with lamb before, but it might be my new favorite way. The meat gets super tasty and tender, and I add some veggies in here to add some extra nutrition. I had this for lunch with my mom who highly complimented it (she is queen of cooking too!), and it was husband-approved which is always the goal! You can also use ground beef, ground turkey or ground chicken.

Process

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Cook pasta according to package instructions.
  2. While pasta is cooking, add olive oil to a medium/large pan.
  3. Once heated, add garlic and onion and saute until fragrant.
  4. Add in carrots and celery, and mix well.
  5. Once carrots and celery start to soften, add ground meat to the pan and cook until no longer pink.
  6. Add in sauce and mushrooms, and combine.
  7. Bring sauce to a simmer and then lower heat and cover.
  8. Let simmer for 10 minutes.
  9. Serve hot with pasta, or store in an airtight container in the fridge to enjoy the next few days!

Notes

Barilla Protein+ pasta is my favorite to use here for a high protein meal all around.
