this oneâs for the pizza roll & bagel bite nostalgia đâš â because those bite-sized pizza snacks raised me & will forever have a place in my heart lol.
my version is the grown-up glow-up: gluten-free, higher-protein, made with real ingredients, & actually satisfying.
the crust starts with simple mills pizza mix, then gets loaded with sauce, veggies, ALL the meats (canadian bacon, sausage, and pepperoni) & , & plenty of cheese (no skimping â ever). they bake up crispy on the edges, soft in the middle, & are perfect for dunking â no microwave required.
ideal for game day, parties, or an easy weeknight dinner when you want pizza vibes without the junk. đđIngredients
pizza crust
- 9.8 oz9.8 oz9.8 oz Almond Flour Pizza Dough Baking Mix - Simple Mills

- 1 Tbsp1 Tbsp1 Tbsp Psyllium Husk, Ground

- 1/2 cup1/2 cup1/2 cup Plain Greek Yogurt
- 2 Tbsp2 Tbsp2 Tbsp Apple Cider Vinegar
- 1/4-1/2 cup1/4-1/2 cup1/4-1/2 cup Water
fillings
- Marinara Classico - Ciao Pappy, may sub any tomato-based sauce

- sautéed frozen vegetables (click for recipe), I used a mix of peppers, onions, & mushrooms
- Sugar-Free Canadian Pork Bacon Slices - US Wellness Meats, cooked & diced

- Italian Sausage, Mild, cooked & crumbled

- Pepperoni, Uncured, diced
- Mozzarella, shredded

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- preheat oven to 375.
- in a large bowl, combine pizza crust mix & psyllium husk.
- in a separate bowl, whisk together greek yogurt, ACV, & water.
- add liquid ingredients to dry & create into a dough; add any additional water as needed.
- to a silicon muffin tin, add a large cookie scoop of dough to each tin, then press down flat.
- dip back of cookie scoop into olive oil, then press down into the center of each crust.
- bake for 15 minutes & prepare pizza fillings.
- remove from oven then layer on sauce of choice â any veggies â all the meats! (I used canadian bacon, sausage, & pepperoni) â a generous layer of cheese.
- bake pizzas for another 12-15 minutes, with the option to broil for a few minutes at the end.
- serve with extra sauce & enjoy!
