Mini Chocolate Protein Muffins (flourless/egg-free)
The easiest mini muffins you'll ever make! These Mini Chocolate Protein Muffins only require four ingredients: bananas, yogurt, protein powder and cocoa! Add chocolate chips for a little extra treat or keep them as is, either way they make for a quick, high protein snack!
Ingredients
- 0.75 cup0.75 cup0.75 cup Banana, overripe, mashed
- 0.5 cup0.5 cup0.5 cup Kite Hill Vanilla Greek-style Yogurt
- 0.333 cup0.333 cup0.333 cup Vegan Protein Powder
- 2 Tbsp2 Tbsp2 Tbsp Cocoa Powder, heaping
- 0.25 cup0.25 cup0.25 cup Semi-Sweet Mini Chocolate Chips, optional

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Preheat oven to 350 degrees & prep a mini muffin pan.
- In a bowl, combine mashed bananas, yogurt, protein powder and cocoa powder until smooth batter forms.
- Stir in chocolate chips, if using.
- Fill each muffin to the top, they won't rise much!
- Bake for 20-25 minutes or until toothpick comes out clean.
Notes
Because these muffins are vegan, you can taste test them! Taste the batter to see if you need additional sweetener. Depending on how ripe your bananas are as well as your protein powder, you might need to add a bit of maple syrup to sweeten.
