Miso Mushroom, Asparagus, and Blueberry Skillet with Chicken Sausage

Ingredients
- 2 Tbsp2 Tbsp2 Tbsp Olive Oil
- 5 whole5 whole5 whole Chicken Sausage, sliced into rounds, Whole30 compliant if needed)
- 2 cups2 cups2 cups Baby Bella Mushrooms, sliced
- 2 cups2 cups2 cups Asparagus, trimmed and cut into 1-inch pieces
- 1 cup1 cup1 cup Blueberries
- 4 cloves4 cloves4 cloves Garlic, minced
- 2 Tbsp2 Tbsp2 Tbsp Ginger Root, minced
- 3 Tbsp3 Tbsp3 Tbsp Coconut Aminos
- 1 Tbsp1 Tbsp1 Tbsp White Miso Paste
- 2 Tbsp2 Tbsp2 Tbsp Rice Vinegar
Process
Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- In a small bowl, whisk together coconut aminos, miso paste, rice vinegar and Set aside.
- Add 2 tbsp oil to the skillet.
- Add garlic and ginger, sauté for 1-2 minutes until fragrant.
- Add mushrooms and cook for 4-5 minutes until they release moisture and become golden.
- Add asparagus and sauté for another 4-5 minutes until tender but still crisp.
- Add sliced chicken sausage and cook for 4-5 minutes until golden and crispy.
- Take th e skillet off the heat and gently Stir in the fresh blueberries
- Add Sauce & Combine:
- Pour the sauce over the mixture and toss everything to coat evenly.
