no-bake chickpea cinnamon roll protein bites
here is a great bite-sized, no-bake, high protein sweet treat for you to enjoy any time of day!
Ingredients
bites
- 15 oz15 oz15 oz Chickpeas, drained & rinsed
- 0.25 cup0.25 cup0.25 cup Almond Butter
- 0.25 cup0.25 cup0.25 cup Lakanto Classic Monkfruit Sweetener (with Allulose)
- 0.25 cup0.25 cup0.25 cup Vanilla Protein Powder (Be Well by Kelly)
- 1 tsp1 tsp1 tsp Primal Palate Vanilla Extract
- 1 tsp1 tsp1 tsp Ground Cinnamon
- 1 pinch1 pinch1 pinch Redmond Real Salt
frosting
- 0.25 cup0.25 cup0.25 cup Plain Greek Yogurt
- 1 - 2 Tbsp1 - 2 Tbsp1 - 2 Tbsp Lakanto Classic Monkfruit Sweetener (with Allulose)
- 0.5 tsp0.5 tsp0.5 tsp Primal Palate Vanilla Extract

Process
Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- in a food processor combine all bite ingredients.
- spread dough into a lined square dish or bite size silicon mold.
- freeze for 30-60 minutes.
- mix frosting & add to a zip lock bag; refrigerate until bites are set.
- cut dough into bites or pop out of molds & place on a lined baking sheet.
- cut a small bit off the corner of your zip lock bag.
- drizzle on frosting to each bite, then store in the freezer.
