Nonna Filomena’s Famous Zucchini Fritters
I've decided it's time to share my Nonna Filomena's famous zucchini fritters recipe with you all. I feel as though I have perfected it. They come out just like hers! This is a great make ahead appetizer or side dish to accompany any Italian spread. Enjoy them hot, cold, room temp or even in a panino the next day!
Ingredients
- 1 cup1 cup1 cup All Purpose Flour
- 2 whole2 whole2 whole Zucchini, (sliced into coins, thin)
- 2 Tbsp2 Tbsp2 Tbsp Salt and Pepper, (to taste)
- 2 whole2 whole2 whole Eggs
- 1 tsp1 tsp1 tsp Baking Powder

- 2 Tbsp2 Tbsp2 Tbsp Canola Oil, (to shallow fry and coat the pan)
- 1 Tbsp1 Tbsp1 Tbsp Margarine, (Nonna always used Becel brand)
- 0.666 cup0.666 cup0.666 cup Milk, (may need to add an extra 1 tbsp!)

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Wash and dry both zucchinis
- Remove both ends of the zucchini
- Cut both zucchinis into thin coin shapes (smaller than 1inch thick each)
- In a large mixing bowl, add eggs, milk, salt, pepper - mix well
- To the wet batter, add flour, and baking powder, and dried parsley - mix well
- The batter should become like pancake mix, and you should be able to make ribbons from it (without the batter breaking)
- Over medium heat, add the canola oil and margarine to your pan so it coats it nicely for shallow frying
- You know your oil is ready for frying if you place a wooden spoon in it and it begins to bubble around it
- Coat each zucchini slice in the batter on both sides and add to the pan
- Flip each slice after about 3 minutes or until you can see a crispy golden exterior
- Once flipped, cook for another 3 minutes and allow to cool on a baking tray with paper towels
- Add an extra dash of salt and pepper to the fritters if you desire before serving
Notes
Store in fridge in an air tight container to keep the freshness in! Enjoy it at it's best for about 5 days (if you have any leftovers, they're that good.)
