One Pot Creamy Sun-dried Tomato Pasta
As a mom a one pot meal makes life so easy! It’s easy, yummy and I love little clean up!
Ingredients
- 1 lb1 lb1 lb Pasture-raised Chicken Breasts - US Wellness Meats, Diced

- 2 whole2 whole2 whole Shallot, Chopped
- 4 cloves4 cloves4 cloves Garlic, Chopped

- 0.5 cup0.5 cup0.5 cup Sun Dried Tomatoes - Jersey Pickles

- 2.5 cups2.5 cups2.5 cups Chicken Broth, Low Sodium

- 8 oz8 oz8 oz Ricotta, Whipped (you can also use mascarpone cheese)
- 0.5 lb0.5 lb0.5 lb Penne Pasta, Or your favorite pasta shape

- 1 cup1 cup1 cup Baby Spinach
- 2 tsp2 tsp2 tsp Basil, Dried

- 2 tsp2 tsp2 tsp Oregano, Dried

- 2 tsp2 tsp2 tsp The Blend Seasoning - Kinder's
- 1 tsp1 tsp1 tsp Himalayan Pink Salt (Fine Grain) - The Spice Lab, To taste

- 1 tsp1 tsp1 tsp Black Pepper, To taste

- 0.25 cup0.25 cup0.25 cup Parmesan Cheese

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- 1. Dice your chicken and rub down with kinders blend seasoning or a mix of garlic powder, salt and pepper.
- 2. Drizzle oil in your pan and sautee the chicken until cooked about 7 minutes.
- 3. Remove the chicken from the pan
- 4. Drizzle olive oil or a tbsp of the oil from the sun-dried tomatoes to the pan and cook shallots and garlic for 2-3 minutes.
- 5. Add basil, oregano, salt and pepper and sun friend tomatoes to the pan.
- 6. Add chicken broth and pasta. Make sure pasta is submerged in the broth and cover for about 7-10 minutes or until your pasta is almost fully cooked.
- 7. Add back the chicken, whipped ricotta and spinach. Stir and cover for 3-5 more minutes.
- 8. Top with Parmesan cheese and enjoy.
