- 111 Red Bell Pepper, diced

- 0.5 cup0.5 cup0.5 cup Feta Cheese, crumbled
- 2 Tbsp2 Tbsp2 Tbsp Greek Yogurt, heaping
- 2 Tbsp2 Tbsp2 Tbsp Stone Ground Mustard, heaping
- 1.5 Tbsp1.5 Tbsp1.5 Tbsp Honey
- 2 Tbsp2 Tbsp2 Tbsp Lemon Juice
- 2 Tbsp2 Tbsp2 Tbsp Extra Virgin Olive Oil
- 0.25 tsp0.25 tsp0.25 tsp Organic Crushed Red Pepper - The Spice Lab, more if desired

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Cook the pasta according to package directions until al dente.
- Drain and rinse under cold water to stop the cooking, then set aside to cool slightly.
- While the pasta cooks, shred the roasted chicken.
- Dice the red bell pepper, thinly slice the red onion, chop the sun-dried tomatoes, and slice the green olives.
- In a large bowl, add all the dressing ingredients and whisk until smooth.
- Add the red onion, olives, bell pepper, feta, and sun-dried tomatoes to the bowl.
- Add the arugula and chickpeas.
- Add the cooled pasta and shredded chicken on top.
- Toss everything together until evenly coated with the dressing.
- Taste and adjust seasoning with extra honey, sea salt, and black pepper if needed.
- Chill for 15–30 minutes before serving.
Notes
To make this vegetarian, simply omit the chicken. The chickpeas, feta, and Greek yogurt dressing still provide plenty of protein and flavor.
