Ooey Gooey Pistachio Chocolate Chip Cookies (Edit recipe)

These ooey gooey cookies are like eating cookie dough in cookie form. They’re so good, super sweet and a touch of salty. These cookies are gluten and dairy free, and they are made without an egg. They did flatten, however, using a spatula, you can reshape them and make them look like the best chunky cookie. They are literally dough like, I’m obsessed!

Process

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. 1. Preheat your oven to 350 degrees. Line a baking sheet with parchment paper.
  2. 2. In a mixing bowl, add your softened butter, both flours, baking powder, cane sugar and Nutpods creamer. Mix together until your cookie dough forms. Fold in pistachios and chocolate chips.
  3. 3. Roll cookie dough into balls and place on parchment paper. Place pan in oven and bake for 12 minutes. The cookies most likely have flattened and look hopeless at this point. Using a spatula, reshape them into a circle. They should form a chunky cookie. Top with sea salt and let them sit to harden.
  4. 4. Once they have hardened on the outside, remove from pan and enjoy! They will be extra gooey on the inside.
