  1. in a large skillet, saute onion, peppers, & squash for 6-8 minutes.
  2. add in kale & cook until wilted.
  3. transfer cooked veggies to a slow cooker, then add in all remaining ingredients.
  4. cook on high for 3-4 hours or low for 6-8 hours OR until the chicken is cooked through.
  5. serve with any toppings of choice.
