Paleo Crock Pot Chili
Chili is just one of those great hearty meals that always seems best in the cold months of the year. Or in LA, when the temperature dips below 60. I can’t wait to make this during the next couple months especially since ski season is starting, and nothing tastes better than a big bowl of chili after a day on the hill.
Ingredients
- 2 lb2 lb2 lb Ground Beef, grass-fed
- 1 Tbsp1 Tbsp1 Tbsp Bacon Grease
- 111 Yellow Onion, large, diced
- 4 cloves4 cloves4 cloves Garlic, minced
- 444 Celery, stalks, chopped
- 111 Bell Pepper, diced
- 14 oz14 oz14 oz Diced Tomatoes
- 6 oz6 oz6 oz Tomato Paste, 1 small can
- .25 cup.25 cup.25 cup Raw Cacao Powder
- 2 tsp2 tsp2 tsp Ground Cumin
- 1 tsp1 tsp1 tsp Red Pepper Flakes
- 1 tsp1 tsp1 tsp Chili Powder
- 1 tsp1 tsp1 tsp Smoked Paprika
- 1 tsp1 tsp1 tsp Salt
- Black Pepper, to taste
- Chipotle Peppers in Adobo Sauce, (from can - make sure they are wheat-free), sliced

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Heat bacon fat in a large pan over medium heat.
- Add garlic and onion; saute until tender but do not burn.
- Add the ground beef and cook until about medium (just long enough to brown most of the meat).
- Once browned, add meat/garlic/onion mixture to the crock-pot.
- In no particular order, add in the celery, bell pepper, diced tomatoes, tomato paste, cacao powder, chipotle peppers (if used) and spices.
- Stir all ingredients well and set Crock-Pot to low and cook for 6-8 hours, stirring occasionally.
- Serve and enjoy!
Notes
With the chipotle peppers, you can only use the adobo sauce if you prefer to keep the chipotle flavor with less heat. Using 100% cacao powder gives the chili a full, rounded flavor - similar to a mole. Be sure it is 100% and not containing any hidden sugars, soy lecithin or added cacao butter.
