Paleo Pumpkin Snickerdoodles

Ingredients

- 2 Tbsp2 Tbsp2 Tbsp Coconut Flour

- 1 Tbsp1 Tbsp1 Tbsp Tapioca Starch

- .5 tsp.5 tsp.5 tsp Organic Cinnamon - Primal Palate

- .5 tsp.5 tsp.5 tsp Baking Soda
- .25 tsp.25 tsp.25 tsp Sea Salt

- .25 cup.25 cup.25 cup Ghee, melted

- .33 cup.33 cup.33 cup Almond Butter, room temperature

- .33 cup.33 cup.33 cup Pumpkin Purée
- .33 cup.33 cup.33 cup Pure Maple Syrup
- 3 Tbsp3 Tbsp3 Tbsp Maple Sugar, or coconut sugar

- 111 Egg Yolk
- 1 tsp1 tsp1 tsp Pure Vanilla Extract

- 2 Tbsp2 Tbsp2 Tbsp Cinnamon Sugar Cookie Blend - Primal Palate, to roll cookies in, put in small shallow bowl

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- In a medium bowl add all dry ingredients and stir.
- Add remaining ingredients (except cinnamon sugar). Stir well.
- Refrigerate for 20 minutes.
- Heat oven to 350 degrees. Line 2 baking sheets with parchment paper.
- Use a cookie scoop and scoop dough then gently roll in cinnamon sugar.
- Place on cookie sheet and press down to about 1/2” thickness.
- Bake for 9-10 minutes until slightly firm to the touch.
- Let cool on cookie sheet for 10 minutes before removing.
Notes
You can store in air tight container for 4 days, or freeze for a month.

I love a good Snickerdoodle, and the addition of pumpkin is absolutely brilliant! Can’t wait to make a batch of these.
