Peanut Butter Protein Mousse
Thick and creamy, protein rich peanut butter mousse! With a chocolate ganache coating for a blood sugar balancing sweet tooth fix!
Ingredients
- 16 oz16 oz16 oz Cottage Cheese
- 0.25 cup0.25 cup0.25 cup Creamy Peanut Butter
- 3 Tbsp3 Tbsp3 Tbsp Maple Syrup, Pure
- 0.25 cup0.25 cup0.25 cup Vanilla Protein Powder, Optional, or peanut butter protein powder
- 0.5 tsp0.5 tsp0.5 tsp Vanilla Extract
- 1 pinch1 pinch1 pinch Sea Salt
- 0.25 cup0.25 cup0.25 cup 70% Cacao Organic Vegan Bitter-Sweet Dark Chocolate Chips with Organic Stevia - Pascha Chocolate Co.
- 2 Tbsp2 Tbsp2 Tbsp Coconut Cream, *
Ganache
Process
Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Blend together mousse ingredients until smooth
- You can optionally add in protein powder for more protein and/or flaxseed or hemp hearts for more omega 3 fatty acids
- Pour into 4-5 glass jars
- Melt your chocolate chips in 30 second intervals
- Allow to cool, then stir in coconut cream until creamy.
- *can also use 3tbsp peanut butter + 3 tbsp chocolate chips melted together for ganache
- Pour ganache overtop your mousse, sprinkle with peanuts and sea salt salt
- Refrigerate for 30 min+ and enjoy!
- Will store well covered in the fridge for 3-4 days
