Peanut Butter Protein Truffles
These make for a perfect last minute gift idea, or Christmas dessert to add to the spread! They have no refined sugar, they're gluten & dairy free, and have added protein for a more blood sugar friendly treat! 👏🏻
Ingredients
- .5 cup.5 cup.5 cup Creamy Peanut Butter
- .33 cup.33 cup.33 cup Almond Flour
- .33 cup.33 cup.33 cup Vanilla Protein Powder
- .25 cup.25 cup.25 cup Medjool Date Syrup, Or maple syrup x
- 1 tsp1 tsp1 tsp Pure Vanilla Extract
- .75 cup.75 cup.75 cup Dark Chocolate Chips, Melted

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Combine all your dough ingredients together until it easily rolls together into a ball. I've found nearly every protein powder absorbs moisturize differently, so if they're too dry add more wet ingredient (syrup) and if they're too runny / don't form add more dry (flour or protein powder). Roll into balls and place in the freezer while you melt chocolate. This will help them keep their shape & keep the chocolate from running off easily
- Dip each ball in chocolate of choice and sprinkle or drizzle to your hearts decorating!
- Keep stored in the fridge and freezer
