Pencil Cake Pops
These adorable treats are dye free, gluten free, dairy free and have a protein boost, too! They're completely no bake and are as delicious as they are cute!
Ingredients
- .25 cup.25 cup.25 cup Cashew Butter
- .25 cup.25 cup.25 cup Vanilla Protein Powder
- 3 Tbsp3 Tbsp3 Tbsp Coconut Flour
- .25 cup.25 cup.25 cup Pure Maple Syrup
- 1 tsp1 tsp1 tsp Pure Vanilla Extract
- .5 cup.5 cup.5 cup White Chocolate
- 1 pinch1 pinch1 pinch Color Kitchen Foods Yellow Food Color
- 6 whole6 whole6 whole Paleo Waffle Cones (click for recipe)
- 1 pinch1 pinch1 pinch Sprinkles, Pink

Process
Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Combine dough ingredients then roll into 6 balls
- Melt a little bit of dark chocolate to dip the ends of your waffle cones in them
- Melt your white chocolate, divide in half, add your yellow, then dip the tops of your cones into the yellow
- Place your cake ball onto the top of your cone, pressing against the yellow chocolate, as it will hold it in place once chocolate hardens
- Dip the cake ball into white chocolate then place naturally colored pink sugar crystals on top and place in the fridge until chocolate has hardened, and enjoy!
Notes
I used gluten free waffles cones, pascha brand white chocolate and dark chocolate to keep it dairy free, and used natural yellow colorant and natural pink sugar crystals adjust to your dietary preferences!
