Process

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Allow your plant butter to come to room temperature so it is soft enough to whip.
  2. Ideally you want to sift your powdered sugar so your frosting doesn't have any lumps.
  3. Place your softened plant butter into the bowl of a stand mixer.
  4. Add in the vanilla extract.
  5. Using the whisk attachment (not the paddle attachment), whisk the butter on high speed for 5-7 minutes, scraping down the bowl as needed.
  6. For ultra-fluffy buttercream, I whisk the butter until it looks like frosting without the powdered sugar added. This takes 5-7 minutes.
  7. You want to add in the powdered sugar in batches. Start with about 2 cups, and start whipping it into the frosting on low speed so that you don't end up with a plume of powder in the air.
  8. Once the sugar has been slowly incorporated into the butter, you can turn the speed up to medium-high to keep whipping the frosting.
  9. Once the sugar has fully been whipped into the butter, add another batch of powdered sugar, and repeat the process, scraping down the bowl of the stand mixer as needed.
  10. Once you have combined all of the powdered sugar into the butter, scrape down the bowl of the stand mixer well, to be sure that all of the butter is evenly whipped with the sugar.
  11. Whisk the frosting again for about 30 seconds.
  12. Now you can use the frosting as desired to frost your cakes, cupcakes or cookies.

Notes

It is important that you use high-quality plant-based butter sticks for this recipe. One that specifically states that it can be used for baking. I prefer Earth Balance, because it can be found at most grocery stores, and makes perfect frosting. I have tried using cheaper plant-based butter in the past, and it has resulted in poor quality frosting that is not able to be piped.
