Ingredients

  • 1 whole Paleo/GF Pie Crust (click for recipe), or single crust from our PIE CRUST MIX
  • 4 Tbsp Raspberry Jam, up to 5 tbsp, can sub flavor of choice
  • 1 whole Egg, whisked with 1 tbsp water for egg wash
  • 2 Tbsp Vanilla Infused Sugar, can sub organic sugar or maple sugar, optional

Process

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Preheat your oven to 385°, make pie crust (or single crust using our PIE CRUST MIX) as directed. Prepare two baking sheets by lining with parchment paper and set aside.
  2. Roll out half the dough to approximately ¼“ thick and cut out 3” squares using a cutter or even a sharp knife. Place squares on the prepared baking sheet. Repeat with the other half of the dough re-rolling scraps as needed. You should get around 15 squares. Use scraps to cut out small hearts if desired.
  3. Brush the surface of each square with egg wash, then place about 1 teaspoon of jam (don’t fill more than that, or it will all leak out while they bake) just off-center of the middle of the square.
  4. Carefully fold over one corner to the middle, then the other side. Fold up the bottom corner to become the bottom of the “envelope” and gently press the bottom corners together to help prevent any leaking while they bake.
  5. Brush the entire envelope with the egg wash to help create a nice golden color and add a small heart if using. Sprinkle each envelope with sugar.
  6. Bake in the preheated oven for 12-15 minutes or until you see that lovely golden color. Remove from the oven.
  7. While the envelopes are warm, you can add more jam as needed to the opening of the envelope.
  8. Cool, serve and enjoy!

Notes

Adding more than 1 tsp of jam to the envelopes before baking will result in a lot of it oozing out while they bake. Adding more to the opening after they're done baking, while they're warm, was the better option.
