These high protein buckeye cookies are a delicious chocolate and peanut butter filled treat! Made from a grain-free cookie and topped with a layer of peanut butter and chocolate, no one will believe that these are a better-for-you cookie.

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Preheat the oven to 350 degrees and line a baking sheet with parchment paper.
  2. In a bowl, combine cookie ingredients and stir to combine.
  3. Scoop batter onto baking sheet and gently shape dough with hands to form a cookie sheet.
  4. Bake for 8-10 minutes.
  5. While cookies are baking, combine peanut butter layer in a bowl. Set in fridge.
  6. Once cookies have cooled, scoop out a tablespoon amount of the peanut butter mixture and press on top of the cookie. Repeat for all cookies.
  7. Melt together chocolate chips and coconut oil.
  8. Top each cookie with melted chocolate and sea salt flakes, if desired.
