a grain-free, high-protein, & sugar-free GIANT crumbl cookie dough cookie?! made in two delicious versions: chocolate chip cookie dough + cookies & cream each features a protein-rich cottage cheese "buttercream" frosting & a version of my BTR protein cookie dough balls 😉 you are in for a real treat!

Process

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results

“buttercream” protein frosting

  1. to a food processor, add cottage cheese & vanilla extract.
  2. once pureed, add remaining ingredients & blend until fluffy.
  3. refrigerate until cookie is completely cooled.

grain-free cookie

  1. preheat oven to 350, then choose whether to make the chocolate chip cookie or cookies & cream version.
  2. to a saucepan, add fat of choice & melt over medium heat (to brown butter, stir butter occasionally & cook for an additional 8-10 minutes to brown).
  3. transfer fat to a bowl; allow to cool.
  4. add nut or seed butter of choice, monk fruit, egg, & vanilla extract melted fat; mix together using a hand mixer.
  5. in a separate bowl, mix together almond flour, coconut flour, protein powder, baking soda, & salt, then mix into wet ingredients.
  6. fold in chocolate chips.
  7. place cookie dough in refrigerator for 30 minutes.
  8. press ½ dough evenly into an 8” cast-iron skillet & sprinkle with sea salt.
  9. bake skillet for 12-14 minutes or until edges are golden brown.
  10. allow to cool completely.
  11. add “buttercream” protein frosting to cookie, then sprinkle on protein cookie dough balls.
  12. freeze other half of dough or make a second batch!
