peanut butter lovers, this one's for you! similar to my protein "reese's" cups, but with a delicious crunchy pb granola crust.

Process

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. add granola & melted coconut oil to a food processor & blitz a couple of times until a crumble forms.
  2. in a mini muffin tin, add muffin liners OR use a mini silicon mold.
  3. using a small cookie scoop, add granola mixture to each muffin divot.
  4. freeze until peanut butter filling is ready.
  5. to a food processor, mix together ingredients for peanut butter filling.
  6. using a small cookie scoop (~1 t), add a scoop of peanut butter filling on top of granola.
  7. in a small sauce pan, melt dark chocolate chips.
  8. freeze until chocolate topping is ready.
  9. add a small scoop (~½ tsp) of melted chocolate to the top of each cup.
  10. add a sprinkle of salt & freeze for 10 minutes or until hardened; store in the freezer.
