Protein Twix Bars
One of those treats that seems too good to be true! These are no bake, gluten, dairy, and refined sugar free, with a protein boost, too!
I used my favorite clean ingredient protein powder & collagen peptides from Just Ingredients here. They're nourishing and give the best taste in my healthier treats! Code colleenF10 saves you sitewide on her protein powder flavors
Ingredients
Shortbread
- 2 cups2 cups2 cups Almond Flour
- .5 cup.5 cup.5 cup Vanilla Protein Powder, Or oat flour
- .25 cup.25 cup.25 cup Pure Maple Syrup
- .25 cup.25 cup.25 cup Coconut Oil, Melted
Caramel
- 0.666 cup0.666 cup0.666 cup Creamy Peanut Butter, Or cashew butter
- .33 cup.33 cup.33 cup Pure Maple Syrup
- 2 Tbsp2 Tbsp2 Tbsp Coconut Oil, Melted
- 2 whole2 whole2 whole Collagen, 2 whole scoops**
- 1 tsp1 tsp1 tsp Pure Vanilla Extract
Coating
- 2 cup2 cup2 cup Dark Chocolate, **
- 2 tsp2 tsp2 tsp Coconut Oil

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Combine shortbread ingredients together, then press down into an 8x8 dish lined with parchment paper. Place in the freezer while you make the caramel
- Mix together drippy nut butter, syrup, vanilla, coconut oil, and collagen until smooth
- Pour overtop shortbread layer and freeze for 1hr+
- Melt chocolate and coconut oil. You will have extra, but you want enough to dunk your bars to fully coat
- Slice your Twix bars in 10 bars or 20 squares
- Dip in chocolate, dab to allow excess to drip off, then place on parchment paper
- Optionally sprinkle with flakey sea salt
- Place in the fridge for an addition 10 min for chocolate to harden
- Enjoy!
- Store in the fridge
Notes
You can place unused chocolate in the fridge to use for your next recipe! You'll have extra. Alternatively, you can drizzle chocolate just overtop the bars instead of dunking to fully coat them Can replace vanilla protein powder with oat flour can omit collagen for caramel if you prefer. It does add to the gooeyness, but the recipe will work fine without it **please note in order for your caramel to be ooey gooey pull worthy you'll need to let them come to room temp ~10 min+ versus right out of the fridge!

Can I replace the almond flour with oat flour or coconut flour? (I have a nut allergy, so no almonds for me)
Almond flour is hard to replace since it’s got a texture of its own. If you search “healthier Twix bars” on this site it will take you to my nut free Twix bars I made a while back!

Thank you for the recipe! Would you be willing to share the brand name and where you buy each of the ingredients that you use in your recipe? I know next to nothing about cooking or baking. I love sweets, but alas, I am diabetic, and I am in search of healthier treats/food. My oven doesn’t work, so I live off of food (usually cooked by someone else) made in a microwave, on a stovetop, an air fryer, or an Instapot. Convenience is my middle name! Lol

Hi! I use Pascha stevia sweetened dark chocolate to keep it lower sugar! Most of the ingredients you can click the shopping cart next to it and it will bring up the brand used!
What collagen do you recommend? I’ve never bought or used it so unsure where to start – there’s so many options out there!
I like the Great Lakes wellness brand! You can get it from their site or Amazon or I’ve seen it at sprouts
