Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Base:
  2. Combine the cashew butter, vanilla, salt, and syrup together and mix well. Stir in flour, collagen until a dough forms. Adding in 1-2 tbsp of milk at a time until desired consistency.
  3. Press into mini muffin molds.
  4. Caramel:
  5. In a medium saucepan over medium heat, combine the coconut cream, coconut sugar, and maple syrup. Stir well to dissolve the sugar.
  6. Bring the mixture to a gentle boil, stirring frequently. Reduce to a low simmer and cook for 10-15 minutes until thickened and slightly darker in color.
  7. Remove from heat and stir in sea salt and vanilla extract. Mix until smooth.
  8. Let the caramel cool for 10-15 minutes and top the base with 1 tbsp of caramel.
  9. Transfer to a jar and store in the fridge. It will thicken as it cools.
  10. Chocolate topping:
  11. Melted the chocolate and coconut oil together and drizzle over the top of the candies.
  12. Place in the fridge to set for 1-2 hrs.
  13. Once set, enjoy!!
