Protein Twix Bites
Simple, No Bake, Gluten Free, Dairy free and low in sugar... these will have you making them on repeat and never looking back!
Ingredients
Base
- 0.5 cup0.5 cup0.5 cup Coconut Flour

- 2 Tbsp2 Tbsp2 Tbsp Vanilla Collagen Peptides Powder - Further Food, about 2 scoops

- .5 cup.5 cup.5 cup Creamy Peanut Butter

- .25 cup.25 cup.25 cup Pure Maple Syrup
- 2 - 4 Tbsp2 - 4 Tbsp2 - 4 Tbsp Almond Milk
Caramel
- .5 cup.5 cup.5 cup Coconut Cream

- 0.25 cup0.25 cup0.25 cup Coconut Sugar

- 2 Tbsp2 Tbsp2 Tbsp Pure Maple Syrup
- 1 tsp1 tsp1 tsp Vanilla Extract

- 1 pinch1 pinch1 pinch Sea Salt

Chocolate
- 1 cup1 cup1 cup Dark Chocolate

- .5 Tbsp.5 Tbsp.5 Tbsp Coconut Oil

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Base:
- Combine the cashew butter, vanilla, salt, and syrup together and mix well. Stir in flour, collagen until a dough forms. Adding in 1-2 tbsp of milk at a time until desired consistency.
- Press into mini muffin molds.
- Caramel:
- In a medium saucepan over medium heat, combine the coconut cream, coconut sugar, and maple syrup. Stir well to dissolve the sugar.
- Bring the mixture to a gentle boil, stirring frequently. Reduce to a low simmer and cook for 10-15 minutes until thickened and slightly darker in color.
- Remove from heat and stir in sea salt and vanilla extract. Mix until smooth.
- Let the caramel cool for 10-15 minutes and top the base with 1 tbsp of caramel.
- Transfer to a jar and store in the fridge. It will thicken as it cools.
- Chocolate topping:
- Melted the chocolate and coconut oil together and drizzle over the top of the candies.
- Place in the fridge to set for 1-2 hrs.
- Once set, enjoy!!
