Pumpkin Bars with Cream Cheese Frosting (Paleo)
These paleo bars are reminiscent of old school baking, a simple cake with a homemade frosting. You will love the fall flavors. It will remind you of grandma’s baking. Gluten free and grain free, a healthier version of an old favorite.
Ingredients
- 2.25 cups2.25 cups2.25 cups Almond Flour

- 2 Tbsp2 Tbsp2 Tbsp Tapioca Starch, Or arrowroot flour

- 1 tsp1 tsp1 tsp Baking Soda
- 1 Tbsp1 Tbsp1 Tbsp Pumpkin Pie Spice

- .5 tsp.5 tsp.5 tsp Cinnamon, Ground

- .25 tsp.25 tsp.25 tsp Salt

- 1 cup1 cup1 cup Pumpkin Purée
- 333 Eggs, Room temperature
- .5 cup.5 cup.5 cup Pure Maple Syrup
- 1 tsp1 tsp1 tsp Pure Vanilla Extract

- 6 oz6 oz6 oz Cream Cheese, Full Fat
- 6 Tbsp6 Tbsp6 Tbsp Butter, Unsalted

- 1 tsp1 tsp1 tsp Pure Vanilla Extract

- 3 cups3 cups3 cups Powdered Sugar, Sifted
- .25 tsp.25 tsp.25 tsp Salt

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Preheat the oven to 350 degrees. Lightly oil a 8x8 glass baking dish. Set aside.
- In a medium bowl add the flours, baking soda, spices, and salt. Stir to combine.
- In a small bowl add the remaining ingredients and stir to combine.
- Pour the wet ingredients into the dry and using a large whisk stir well.
- Pour into the baking dish and bake for 28-30 minutes.
- Bars are done when a toothpick comes out clean.
- Let them cool completely.
- Make the frosting by sifting the powdered sugar into a medium bowl.
- Add the remaining ingredients and blend with a hand mixer (or stand mixer) on low.
- You may need to adjust powdered sugar or add a bit of milk to get it to your desired consistency.
Notes
These bars can easily be modified by adding 1/2 cup of chopped nuts or chocolate chips.
