Fresh Papaya Dressing
I had picked up a fresh papaya at the Farmer's Market. I used half for smoothies and then had the other half in the refrigerator. Inspiration hit with the idea for making my own fresh papaya salad dressing. The papaya seeds offer lots of nutrition and are too often discarded. Hope you enjoy.
Ingredients
- .5 cup.5 cup.5 cup Papaya, fresh or thawed frozen
- 1 Tbsp1 Tbsp1 Tbsp Papaya Seeds, rinsed
- .75 cup.75 cup.75 cup Extra Virgin Olive Oil
- .25 cup.25 cup.25 cup Apple Cider Vinegar
- .33 cup.33 cup.33 cup Water
- 3 Tbsp3 Tbsp3 Tbsp Honey
- 1 Tbsp1 Tbsp1 Tbsp Lemon Juice
- 2 tsp2 tsp2 tsp Salt
Process
Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Put all ingredients into a blender and blend until smooth with seed flecks.
- Store in Mason jar for up to 8 days in the refrigerator.
Notes
If you are using frozen papaya and don't have the seeds it is fine. Just omit.
