- 1. Blend 1/2 cup cashews, 1/4 cup walnuts and 1/4 cup oats in a high-speed blender. Keep it aside.
- 2. In a small bowl, mix together the spices (1 tsp cinnamon, 1/4 tsp nutmeg, 1/4 tsp all spice, and a pinch of salt) and keep aside.
- 3. Add 1/2 tbsp ghee to a heated pan and proceed to add 1 cup of pumpkin purée. Sauté the purée for 4 minutes. Add the blended nut and oats mixture, 1/2 cup maple syrup and 1/2 tbsp. ghee. Mix well to avoid any lumps.
- 4. Add the spice powder and mix well. Cook in low- medium heat for 15 minutes until the mixture leaves the sides of the pan and gets thickened. Do stir in between to avoid the purée sticking to the bottom of the pan.
- 5. Switch off the heat, let the mixture cool down. Once cooled, make small round balls, coat in a crumbled cashew mixture, refrigerate (do not freeze) for a few hours and enjoy!!
