  1. In a bowl, combine peanut butter, pumpkin puree, corn flakes, collagen powder, maple syrup, pumpkin spice, vanilla extract, and salt. Stir until smooth and well combined.
  2. Press the mixture into a lined 8x8 inch pan and freeze for about 30 minutes until firm.
  3. In a microwave-safe bowl, melt the dark chocolate and coconut oil in 30-second intervals, stirring in between until smooth.
  4. Remove the pan from the freezer and cut the mixture into bars. Dip each bar in the melted chocolate, coating evenly. Place the bars on a parchment-lined tray and return to the freezer for about 15-20 minutes to set.
  5. Store the bars in the fridge or freezer for a healthy, protein-packed treat.
