Pumpkin Spice Butterfingers

- In a bowl, combine peanut butter, pumpkin puree, corn flakes, collagen powder, maple syrup, pumpkin spice, vanilla extract, and salt. Stir until smooth and well combined.
- Press the mixture into a lined 8x8 inch pan and freeze for about 30 minutes until firm.
- In a microwave-safe bowl, melt the dark chocolate and coconut oil in 30-second intervals, stirring in between until smooth.
- Remove the pan from the freezer and cut the mixture into bars. Dip each bar in the melted chocolate, coating evenly. Place the bars on a parchment-lined tray and return to the freezer for about 15-20 minutes to set.
- Store the bars in the fridge or freezer for a healthy, protein-packed treat.
