- Cook the soba noodles according to the package instructions.
- Heat a large frying pan on medium with the sesame oil.
- Slice or shred all the veggies and put them into the frying pan, and cook for 4 minutes, stirring occasionally.
- In a small mixing bowl, combine the soy sauce, water, and peanut butter and whisk together until smooth.
- Pour the sauce into the frying pan and gently toss to combine.
- Place a lid on the pan and allow the stir-fry to steam until the veggies are fork-tender.
- Remove from the heat and, if desired, top with chopped peanuts and sesame seeds. Enjoy!
