Salmon with Strawberry Salsa
Salmon with an easy to make strawberry salsa. Comes together quickly, it's fresh and tasty.
Ingredients
- 12 oz12 oz12 oz Tomato, Cherry, cut in half
- 111 Avocado, chopped
- 0.25 cup0.25 cup0.25 cup Green Onion (Scallion), sliced
- 1 cup1 cup1 cup Strawberries, cut into small pieces
- 1.5 Tbsp1.5 Tbsp1.5 Tbsp Parsley
- 0.5 tsp0.5 tsp0.5 tsp Sea Salt
- 0.25 tsp0.25 tsp0.25 tsp Black Pepper
- 3 Tbsp3 Tbsp3 Tbsp Extra Virgin Olive Oil
- 2 Tbsp2 Tbsp2 Tbsp Lemon Juice
- 1 Tbsp1 Tbsp1 Tbsp Honey
- 444 Salmon, Sockeye, fillet skin on
- 0.25 tsp0.25 tsp0.25 tsp Sea Salt
- 2 Tbsp2 Tbsp2 Tbsp Extra Virgin Olive Oil

Process
Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- In a medium size bowl add the cherry tomatoes, avocado, green onions, strawberries and parsley. Stir to combine.
- Sprinkle with sea salt and black pepper.
- Add the olive oil, lemon juice, and honey. Mix well. Taste and adjust adding extra salt if needed. Then set it aside.
- Pat dry the salmon fillet and sprinkle the tops with salt and black pepper.
- Pre-heat the oven to 400F.
- Heat the olive oil in a large oven proof skillet then place the salmon fillet skin side down onto the skillet.
- Let the salmon cook for 2-3 minutes so the skin gets crispy, then transfer the skillet to the oven and bake for an additional 10-15 minutes or until it flakes easily with a fork (135° - 145°).
- Remove the salmon to a plate and serve with the strawberry salsa.
Notes
The salmon can be baked, pan fried, or grilled. Wild caught salmon may also be used, and will require less cook time.
