salted hot chocolate protein waffles
if you want to make a hydrating, delicious, sugar-free hot chocolate, I can't recommend enough to try LMNT's chocolate salts. they are sugar-free, tasty, & have the perfect ratio of electrolytes. I added this to my traditional protein waffles to make a warm & cozy breakfast. don't forget to add the marshmallows to really get you in the hot cocoa experience!
Ingredients

- 1 cup1 cup1 cup One Degree Organic Oats, ground into flour
- 2 Tbsp2 Tbsp2 Tbsp Coconut Flour
- 2 Tbsp2 Tbsp2 Tbsp Cacao Powder - Navitas Organics
- 2 Tbsp2 Tbsp2 Tbsp ground Psyllium husk
- 0.25 cup0.25 cup0.25 cup Chocolate Protein Powder - Be Well by Kelly
- 0.5 cup0.5 cup0.5 cup Classic Monkfruit Sweetener (with Allulose) - Lakanto
- 1 tsp1 tsp1 tsp Baking Powder
- 0.25 tsp0.25 tsp0.25 tsp LMNT Chocolate Salt Electrolyte Mix
- 1 cup1 cup1 cup Plain Greek Yogurt
- 222 Eggs
- 1 tsp1 tsp1 tsp Vanilla Extract - Primal Palate
- 0.5 cup0.5 cup0.5 cup Water
- 3 Tbsp3 Tbsp3 Tbsp Sugar-free Dark Chocolate Chips
pb marshmallow fluff
- 0.5 cup0.5 cup0.5 cup Organic Cottage Cheese
- 0.25 cup0.25 cup0.25 cup Peanut Butter Powder
- 2 oz2 oz2 oz Classic Vanilla Sugar-Free Marshmallow - Max Sweets, melted in the microwave for 30 seconds
- 2 Tbsp2 Tbsp2 Tbsp Classic Monkfruit Sweetener (with Allulose) - Lakanto
- 1 tsp1 tsp1 tsp Vanilla Extract - Primal Palate

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- in a large bowl, combine flour, cacao powder, psyllium husk, protein powder, sweetener, baking powder, & LMNT chocolate salt.
- in a separate bowl, whisk together greek yogurt, eggs, water, & vanilla extract.
- add liquid ingredients to dry ingredients; mix together & add 1 tablespoon of water at a time until reaches desired consistency.
- fold in chocolate chips.
- allow batter to sit for 5-10 minutes to thicken - if too thick, add a couple more tablespoons of water.
- heat a waffle iron, then add ~½ cup batter into waffle-iron; cook until waffles are crisp,~3-4 minutes.
- in a food processor, combine all pb marshmallow fluff ingredients.
- when serving, smear pb marshmallow fluff on entire waffle, then drizzle on chocolate syrup, marshmallows, & chocolate LMNT.
