Shrimp Tacos with Mango Slaw & Cilantro Avocado Crema
As the weather heats up, I'm craving all of the fresh and flavorful meals, and these limey tacos certainly fit the bill! Mango season is my absolute favorite, so I'm always looking for new ways to put them to use, and of course, mango slaw never fails to hit the spot. This makes for an absolutely delicious dinner that feels a little special while also providing tons of healthy nourishment. Lots to love, that's for sure!
Ingredients
Shrimp
- 1 - 1.25 lb1 - 1.25 lb1 - 1.25 lb Shrimp, Raw, devained & tails removed

- 111 Lemon Pepper Fajita Seasoning - Siete Foods, can swap for any taco seasoning of choice

- 2 Tbsp2 Tbsp2 Tbsp Extra Virgin Olive Oil, or a avocado oil
- 0.50.50.5 Lime, juiced

- 666 Corn Tortilla, or any tortillas or taco shells of choice, for serving

Mango Slaw
- 0.250.250.25 Red Cabbage, finely shredded
- 111 Mango, large; diced
- 222 Green Onion (Scallion), chopped

- 3 Tbsp3 Tbsp3 Tbsp Cilantro, chopped
- 2 Tbsp2 Tbsp2 Tbsp Lime Juice
- 1 pinch1 pinch1 pinch Salt and Pepper, to taste
Cilantro Avocado Crema
- 111 Avocado, ripe
- 0.5 cup0.5 cup0.5 cup Plain Greek Yogurt
- 0.333 cup0.333 cup0.333 cup Cilantro
- 0.5 - 10.5 - 10.5 - 1 Jalapeño Pepper, seeded, depending on desired spice level
- 1 - 2 clove1 - 2 clove1 - 2 clove Garlic

- 222 Lime, juiced

- 1 pinch1 pinch1 pinch Salt and Pepper, to taste

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Pour olive or avocado oil into a large sauté pan over medium heat. Add shrimp and fajita/taco seasoning (and additional salt and pepper if desired). Toss to coat. Cook for 3-4 minutes per side, flipping to cook evenly, until pink and firm.
- To a large mixing bowl, add mango, cabbage, green onion, cilantro, lime juice, salt and pepper. Toss, and allow to sit for ~10 minutes to marinate and soften cabbage.
- To a blender, add all of the Cilantro Avocado Crema ingredients. Blend, and adjust seasonings to taste.
- Warm your tortillas before serving. Top with shrimp, mango slaw, and crema as well as shredded sharp cheddar cheese if desired. Enjoy!
