siete cookie protein ice-cream sandwich
RUN! no SPRINT! you have to try siete's cookies!!! man oh man are they so tasty. putting two cookies together with my "protein ice-cream" is truly a chef's kiss.
Ingredients
- 0.5 cup0.5 cup0.5 cup Plain Greek Yogurt
- 2 Tbsp2 Tbsp2 Tbsp Organic Creamy Peanut Butter
- 0.25 cup0.25 cup0.25 cup Vanilla Protein Powder - Be Well by Kelly
- 2 Tbsp2 Tbsp2 Tbsp Peanut Butter Powder
- 2 Tbsp2 Tbsp2 Tbsp Classic Monkfruit Sweetener (with Allulose) - Lakanto
- 1 tsp1 tsp1 tsp Primal Palate Vanilla Extract
- 404040 Grain-Free Mexican Shortbread Cookies - Siete Foods, or any of their cookies!
- 0.5 cup0.5 cup0.5 cup Sugar-free Dark Chocolate Chips

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- in a bowl, combine greek yogurt, peanut butter, protein powder, pb powder, lakanto, & vanilla extract.
- on a baking sheet, lay out 20 cookies
- add a scoop or “ice-cream” + another cookie on top.
- place in the freezer for at least 1 hour before dipping in chocolate.
- melt chocolate, then dip ½ of each cookie into chocolate & sprinkle with sea salt.
- freeze for another hour on the baking sheet, then transfer to an air-tight container in the freezer for up to 3 months.
