slow cooker loaded bacon cheeseburger chili
with winter nearly hours away (fun fact - it starts at 3:21 am on december 21st lol), it is the perfect time to make a soup. I have combined comfort food & a winter staple into one hearty chili. hope you enjoy!

Ingredients
chili
- 20 oz20 oz20 oz Frozen Bell Pepper and Onion Blend
- 2 lb2 lb2 lb Thrive Market Ground Beef (93/7)
- 12 - 16 oz12 - 16 oz12 - 16 oz Frozen Hash Browns
- 888 Bacon
- 10 oz10 oz10 oz Rotel Diced Tomatoes & Green Chilies (Original)
- 30 oz30 oz30 oz Black Beans, drained & rinsed
- 4 cup4 cup4 cup Beef Bone Broth
- 0.5 cup0.5 cup0.5 cup Unsweetened Ketchup - Primal Kitchen
- 2 Tbsp2 Tbsp2 Tbsp Yellow Mustard
- 0.25 cup0.25 cup0.25 cup Pickles - Grillo's, finely chopped
- 1.5 Tbsp1.5 Tbsp1.5 Tbsp Chili Powder
- 1 Tbsp1 Tbsp1 Tbsp Smoked Paprika
- 1 tsp1 tsp1 tsp Garlic Powder
- 1 tsp1 tsp1 tsp Onion Powder
- 1 tsp1 tsp1 tsp Dry Mustard Powder
- 1 - 2 tsp1 - 2 tsp1 - 2 tsp Salt and Pepper, to taste
cheese sauce
- 0.5 cup0.5 cup0.5 cup Whole Milk
- 1 Tbsp1 Tbsp1 Tbsp Arrowroot Flour, mixed in a little water
- 1 cup1 cup1 cup Pepper Jack Cheese, or cheddar
topping for serving
- Pepper Jack Cheese, or cheddar
- Pickles - Grillo's
- Bacon

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- in a large skillet, saute pepper & onions.
- transfer to a slow cooker, then brown ground beef.
- transfer to a slow cooker, then add hash-browns & cook until slightly crisp.
- transfer to a slow cooker, then add in remaining soup ingredients to slow cooker, except cheese sauce & toppings.
- cook on high for 3-4 hours or low for 6-8 hours.
- with ~45 minutes left in cooking time, to a sauce pan, add milk, arrowroot starch, & cheese: cook until cheese is melted & a sauce is formed.
- once cheese sauce is made, add to slow cooker for remaining 30 minutes of cooking.
- add soup to a bowl, then sprinkle on any toppings when serving.
