  1. to a large skillet, first saute an onion with a little avocado oil, then transfer to a slow cooker once translucent.
  2. in a large bowl, add cubed beef, starch, salt, & pepper.
  3. add more avocado oil in skillet, then in several batches add beef & sear on all sides.
  4. transfer to slow cooker along with remaining stew ingredients.
  5. cook on high for 3-4 hours or low for 6-8 hours.
