Spicy Watermelon Salad
This fresh and flavorful watermelon salad is a delicious side dish for your next summer barbecue! Layered with flavor, this dish brings sweet, sour, heat, and salt to your plate.

- 1/2 cup1/2 cup1/2 cup Feta Cheese, crumbled
- 2 Tbsp2 Tbsp2 Tbsp Original Extra Virgin Olive Oil - Kosterina

- 1 whole1 whole1 whole Lime, juice only

- 2 tsp2 tsp2 tsp Honey

- 1/4 cup1/4 cup1/4 cup Cilantro, chopped

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Thoroughly wash the outside of your watermelon, and then slice it into 1/2 inch thick triangles or you can alternately cut the watermelon into cubes to present the salad in a bowl.
- Wash your cucumbers and the pepper, and thinly slice both either using a knife or a mandoline.
- The serrano pepper makes this recipe pretty spicy. To lower the heat level, you can slice the pepper in half and seed it as the seeds make it spicier. You can also use a jalapeno instead since jalapeno peppers are less spicy than a serrano.
- If presenting this salad in single serve pieces, arrange the watermelon triangles on a platter, and sprinkle the thinly sliced cucumber and pepper over the watermelon.
- Sprinkle the feta cheese over the watermelon.
- Drizzle the olive oil over the watermelon, and then squeeze the juice of the lime over the watermelon
- Drizzle the honey over the watermelon, and then garnish with the chopped cilantro and sprinkle the flaky salt over the entire dish.
- If you are making this into a cubbed watermelon salad, toss all ingredients together in a large bowl and serve.
- Serve immediately and enjoy.
